Potato Chip Chicken

 

This recipe is adapted from one by Robin Roberts,
Good Morning America news anchor

Potato Chip Chicken 
1 small chicken, cut into pieces
3 cups ridged potato chips
1 clove garlic, minced
1 T. butter
3 Tbs. mayonnaise
1/4 tsp. ground black pepper

1. Preheat oven to 450 degrees F.

Melt the butter in a small pan.
Add the garlic to it and let cool slightly. 
Stir in the mayo. Add black pepper.
Crumble the potato chips in a sandwich bag until they are in big crumb pieces. 
Put the potato chip crumbs in a pie plate.
  Cover a large baking sheet with aluminum foil. 
Spread a bit of the mayo mixture onto a piece od chicken, just on one side.
Dip that piece of chicken into the potato chip crumbs, pressing down so crumbs stick.
Set the crumbed piece of chicken on the baking sheet, crumb side up.
Repeat with other pieces of chicken.

  Place in preheated 450°oven and bake for 12-15 minutes. 
Then turn down the heat to 400° and bake another 15 - 20 minutes. 
Remove the smaller pieces as they will cook first. 
Let the chicken stand for 5 - 15 minutes before serving.
